Jo’s Raspberry Coulis

Our very own queen of cakes and bakes, Jo Hunter, knows a thing or two about creating great tasting treats. She’s an experienced chef, having started out selling her sausage rolls and pies to passers by on Shoreham High Street and later securing a deal to sell the match day pies at football clubs up and down the country. Nowadays, you’ll find Jo at Piglet’s Pantry HQ, overseeing the running of her blossoming business, but she still finds time to whip up some of her own recipes in the kitchen.

With Valentine’s Day just around the corner, Jo is dishing one of her dessert secrets. By adding a sweet, fruity coulis to one of our piglet’s Pantry Desserts, you can create a masterpiece that’s delicious for the tastebuds and the eyes. Jo’s coulis is perfect for drizzling over our Cheesecake Magnums or smeared across a plate of our Profiteroles. It’s easy to make, uses just a couple of ingredients and can be made in advance. Prepare to impress your Valentine’s Day date! 

Ingredients

  • 200g raspberries
  • 2 tablespoons icing sugar
  • Tiny drop of red food colouring (optional)

Method

  1. Heat the raspberries and icing sugar in a pan over a medium heat, continuously stirring, until the fruit softens.
  2. Once the fruit is soft, take the raspberry mixture off of the heat and transfer into a blender. Blend the mixture for a minimum of 30 seconds, until runny and a coulis-like consistency.
  3. Transfer the mixture from the blender, into a bowl, via a sieve. This will remove any seeds from the couis and ensure you have a smooth consistency.
  4. If you would like to make the coulis colour pop even more, you can a tiny drop of red food colouring.
  5. To serve, drizzle your raspberry coulis over your desserts, smear across plates or decant into a small ramekin.
